Saucy and Meaty Eggplant


Level up fried eggplant. Prepare a very easy steps on how to cook SAUCY AND MEATY EGGPLANT. It will be a favorite dish for your family specially the kids.




The wonderful health benefits of eggplants are primarily derived from vitamin, mineral and nutrient content. Eggplants are a rich source of vitamin C, vitamin K, vitamin B6, thiamin, niacin, magnesium, phosphorous, copper, dietary fiber, folic acid, potassium, and manganese.

How to cook Saucy and Meaty Eggplant

Ingredients:

1/2 kg. - ground chicken
3 1/2 tbsp. - chopped onions
1 1/2 tbsp. - garlic minced
1 tbsp. - ginger minced
2-3 tbsp. - cooking oil

1/2 kg. - eggplant - cut half and slice
1 cup rice flour - for eggplant coating
3-4 cups of oil - for deep frying

1 Pouch Del Monte Quick n Easy BBQ Marinade (200ml)
2 tbsp. cornstarch - dissolved in 1/2 cup water
3-4 tbsp. wansuy or kinchay - chopped

Procedure:

1.) Coat the eggplant with rice flour. Deep-fry the eggplant until slightly brown in color. 
     Set aside.

2.) Saute ginger, onion, and garlic in oil. Add ground chicken, ground black pepper.
     Saute until brown. Set aside.

3.) In a separate pot/wok. Heat the Del Monte Quick n Easy BBQ Marinade, dissolved
     cornstarch, wansuy/kinchay and simmer for 5-7 minutes. Add the cooked ground
     chicken and eggplant. Mix all together.

4.) Serve in a bowl with plane rice or fried rice!...
