how to cook BINALAY of Isabela Province

BINALAY is one of the authentic Filipino kakanin from Isabela. It is made 
of glutinous rice and panocha or muscovado (alternative).

Since Binalay is the favorite of my 3  nephews. I am making 5 kgs. of glutinous rice. Please
see below other ingredients needed:

Ingredients and materials needed:

5 kls. - glutinous rice powder
2.5 cups water - for every 1 kg. of glutinous rice powder
1 liter - pure coconut milk
2-3 cups water - for dissolving muscovado powder
2 packs - muscovado powder
7 bundles - banana leaves
1.5 liters - water for binalay cooking

Procedure:

1.) Pass all the banana leaves over the flame, wipe very well and set aside.
2.) Put 1 kg. glutinous rice powder in a bowl. add 2.5 cups of water and mix thoroughly.
3.) Knead the glutinous mixture to make smooth dough.
4.) Mold enough size of mixture, form into a ball using your hands and wrap in banana 
     leaves. (continue mixing and wrapping the rest of glutinous rice with banana leaves).
5.) Arrange the wrapped mixture into a large wok or steamer. (note: folds facing down).
6.) Since im using a wok. I need to pour 1.5 liters of water and cook/steam for about
     2 hours. (we need to cook very well so that it will not spoil easily).
7.) After cooking. Drained and dry.

MAKING LATIK or TOASTED COCONUT MILK CRUMBS

1.) Pour 1 liter of pure coconut milk in a pot. 
2.) Bring to a boil. Simmer gently over low heat.
3.) When oil start to comes out and solid begins to form. Continue stirring, scrape bottom

     and sides of the pot to prevent burning.

4.) Continue cooking and stirring until the coconut oil will separate and the toasted
     coconut milk crumbs become golden brown.
5.) Put off the heat. separate the oil and the toasted coconut milk crumbs and set aside.

DIPPING SAUCE

1.) In the same pot. Pour 1-2 cups of water. Bring to a boil. (add water if necessary).
2.) When boiling, pour the 2 packs of muscovado powder.
3.) Continue stirring until the muscovado powder dissolve very well. Boil until the 
     muscovado syrup thickened.
4.) Put off the heat. Set aside and let it cool.
5.) Put the muscovado syrup in a container or jar. Mix the toasted coconut milk crumbs. 
     (mix very well). (See photos below):



How To Eat BINALAY

1.) Pour enough amount of Sweet Dipping Sauce in a plate/saucer.
2.) Peel the banana leaves little by little. 
3.) Mix it and eat it...
