how to cook BINALAY of Isabela Province
BINALAY is one of the authentic Filipino kakanin from Isabela. It is made of glutinous rice and panocha or muscovado (alternative). Since Binalay is the favorite of my 3 nephews. I am making 5 kgs. of glutinous rice. Please see below other ingredients needed: Ingredients and materials needed : 5 kls. - glutinous rice powder 2.5 cups water - for every 1 kg. of glutinous rice powder 1 liter - pure coconut milk 2-3 cups water - for dissolving muscovado powder 2 packs - muscovado powder 7 bundles - banana leaves 1.5 liters - water for binalay cooking Procedure : 1.) Pass all the banana leaves over the flame, wipe very well and set aside. 2.) Put 1 kg. glutinous rice powder in a bowl. add 2.5 cups of water and mix thoroughly. 3.) Knead the glutinous mixture to make smooth dough. 4.) Mold enough size of mixture, form into a ball using your hands and wrap in banana leaves.
