DINAKDAKAN NI KUYA

Dinakdakan Recipe (Kuya's Version)

Dinakdakan ay paboritong ulam or pulutan ng mga taga Northern Luzon, particularly
ang mga Ilocano's at Ibanag.



Karaniwang inihahanda ito sa mga ispesyal na okasyon tulad ng birthday, piestahan, 
kasalan o maging pang araw-araw na ulam.

SIMPLE PERO MASARAP..!



Ingredients:

1.5 kg. - Mascara ng Baboy
3/4 cup - chopped ginger
1 cup - chopped onions (4-5 pcs. medium size)
1 tbs. - salt
1 tsp. - ground black pepper
1/2 cup - calamansi juice
1 sachet - flavor mix (msg. optional)
2-3 tbs. - vinegar
1 small sachet - mayonnaise (size/amount depends on the amount of dinakdakan you
                          are making (estimate)
5-8 pcs. - siling labuyo/cayenne pepper (chopped)

we also need: 3 packs - uling/charcoal (for grilling)

PROCEDURE:

1.) Clean the Pork Mascara (specially the ears and face) very well.
2.) In a cooking pot pour 8-10 cups of water, lemon grass or bay leaves, pepper corn and
the Cleaned Pork Mascara. Let it boil.
3.) When the water starts to boil. Lower the heat to low and continue to boil for 15-20
minutes.
4.) Remove pork boiled mascara from the boiling pot. Drained. Set aside and let it cool.
5.) Heat-up the grill. Grill the pork mascara side by side. Don't over burnt.
6.) After grilling. Set aside. Let it cool.
7.) Start chopping grilled pork mascara into bite size or small cubes.
8.) Prepare 3/4 cup of chopped ginger, 1 cup of chopped onions, 1 tsp. salt, 1/2 cup
calamansi juice, flavor mix (msg, optional), vinegar, mayonnaise and siling labuyo or
cayenne pepper.
9.) Start combining/mixing all the ingredients in a mixing bowl. Together with chopped pork
mascara. Mix well.
10.) In the video attached. I made with and without mayonnaise as per request by my
siblings.
11.) Add more salt and siling labuyo/"cayenne pepper" (according to taste).
12.) Transfer to a serving bowl and SERVE!

Servings: good for 6-7 persons
